'Neues Trenchier-und Plicatur-Büchlein' by Andreas Klett was first published in 1657. It contains a chapter on tablecloth and napkin folding.

I have not been able to access a copy of the first edition. This page is based on the 1677 edition, but I believe the illustrations are the same as in the original edition.
